Lancaster Stroopies

If you haven’t heard of Stroopies before now, you’ll definitely want to search high and low until you find them and try one for yourself. “Stroopie” is a nickname for the Dutch cookie known as a Stroopwafel that is very common in Holland and the Netherlands. It consists of a dollop of homemade caramel sandwiched between two cinnamon cookies, cut to the exact size of the top of a coffee mug. They’re intended to sit atop your coffee cup to soften from the heat of your coffee. The rest is Ooey-gooey goodness in your mouth.

Stroopies came to Lancaster about 4 years ago. The people who make it all happen are Jonathan and Jennie Groff, who practically live in our backyard.
